Sapote Vegetable Butter

Commonly known as: Extract from Sapodilla seed, Pouteria Sapota Seed Butter (I.N.C.I.).
Botanical name: Pouteria sapota.
Extraction process: First cold pressing from lipid-rich kernels.
Family: Sapotaceae.
Part of the plant extracted: Nuclei.
Location: Originally from Central America and Cuba, it is now cultivated in America and the Caribbean.
Flowering: From January to June in Mexico and from April to May in Cuba.
Provenance, origin: Guatemala, Nicaragua, Mexico.
Phytochemical composition: Polyunsaturated fatty acids (linoleic acid), monounsaturated fatty acids (oleic acid), saturated fatty acids (palmitic acid, stearic acid).
Sensorial properties: Appearance: Creamy solid at temperatures < 15°C, otherwise oily liquid; Color: Light beige to brown; Scent: Sweet bitter almond; Feel: Rich, greasy.
Physical characteristics: Density = 0.910 - 0.920; Oxidative potential: Stable; Saponification index: 190 - 198 KOH/g.
